Meal-in-one Potato

 

A baked potato is a particularly convenient food for those who exercise before dinner. If the potato bakes while you work, out, it will be ready when you are! You’ll likely want two, so make enough.

1 large baking potato

2/3 cup cottage cheese, low-fat or nonfat, as desired

Optional seasonings: scallions, onions; Italian seasonings, garlic powder; crumbled blue cheese, Parmesan cheese.

Irish Tacos:

2 large baking potatoes (8 ounces each)

˝ 15 ounce can pinto beans

˝ cup salsa or chili sauce

2 ounces shredded cheddar cheese, Low fat

Optional toppings: chopped scallions, tomatoes, lettuce, and salsa.

  1. Bake the potatoes in a conventional oven at 425 degrees for 45 to 60 minutes or a microwave oven for 8 minutes and let them stand for 1-2 minutes.
  2. Heat the beans with the salsa or chili sauce.
  3. Split the cooked potatoes and puff them up. Spoon on the beans with salsa; top with the cheese.
