Applesauce Raisin Bread:

1 16-ounce jar applesauce (1-1 ½ cup)

1 egg or 2 egg whites

½ - ¾ cup sugar

¼ cup canola oil

2 teaspoons cinnamon

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon soda

1-1/2 cups flour, preferably half whole wheat and half white

  1. Preheat the oven to 350 degrees
  2. Combine the applesauce, egg, sugar, oil, cinnamon, salt, baking powder, and baking soda. Mix well. Add raisins.
  3. Gently mix in flour. Stir 20 seconds or until just moistened.
  4. Pour into a 4 x 8 loaf pan that has been lightly oiled, treated with cooking spray, or lined with wax paper. Bake for 45 minutes, or until a toothpick inserted near the middle comes out clean.
  5. Let cool for 5 minutes before removing from the pan.
