1 16-ounce jar applesauce (1-1 ½ cup)
1 egg or 2 egg whites
½ - ¾ cup sugar
¼ cup canola oil
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon soda
1-1/2 cups flour, preferably half whole wheat and
half white
- Preheat the oven to 350 degrees
- Combine the applesauce, egg, sugar, oil, cinnamon, salt, baking powder,
and baking soda. Mix well. Add raisins.
- Gently mix in flour. Stir 20 seconds or until just moistened.
- Pour into a 4 x 8 loaf pan that has been lightly oiled, treated with
cooking spray, or lined with wax paper. Bake for 45 minutes, or until a
toothpick inserted near the middle comes out clean.
- Let cool for 5 minutes before removing from the pan.
