Cinnamon oat bran Muffins

1 – ½ cups oat bran, uncooked

¼ cup brown sugar

1 tsp. Cinnamon

1 tsp. Salt

2 tsp. Baking powder

1 egg or 2 egg whites

2 Tbs. canola oil

1–3/4 cup milk

1 cup flour, preferably half-whole wheat and half white.

  1. Preheat the oven to 400 degrees. Line muffin tin with paper baking cups or use a nonstick pan.
  2. In medium bowl, combine the oat bran, brown sugar, cinnamon, salt, and baking powder. Mix well.
  3. Beat the egg with the oil; add the milk, then combine with the oat bran mixture. Gently blend in the flour, mixing until just moistened.
  4. Fill the muffin cups 2/3 full. Bake about 20 minutes, or until a light golden brown.
