HEARTY SWISS CEREAL
2 cups rolled
oats 1 cup raisins
2 cups 1% low-fat
milk 1 cup nonfat plain yogurt
2 teaspoon
honey 1 teaspoon vanilla extract
2 cups diced fruit
berries, apples, pears, peaches, melons
½ cup chopped
walnuts, sliced almonds, or chopped pecans.
- Combine the
oats and raisins in a bowl. Add the milk and stir, then let soak for 30 to 40
minutes.
- Drain off
excess milk, then add the yogurt, honey, and optional vanilla.
- Add fruit and
nuts, and mix together well.
- If not eating
right away, this cereal will keep in a covered container in the refrigerator
for three to four days. You may prefer to add the fruit and nuts just before
serving.
- This
traditional Swiss recipe is a nice change from instant oatmeal or cold
cereal. Feel free to adapt it to suit your child’s taste by substituting
different fruits or omitting the nuts.
