HEARTY SWISS CEREAL

 

2 cups rolled oats                                1 cup raisins

2 cups 1% low-fat milk                        1 cup nonfat plain yogurt

2 teaspoon honey                                 1 teaspoon vanilla extract

2 cups diced fruit berries, apples, pears, peaches, melons

½ cup chopped walnuts, sliced almonds, or chopped pecans.

 

  1. Combine the oats and raisins in a bowl.  Add the milk and stir, then let soak for 30 to 40 minutes.
  2. Drain off excess milk, then add the yogurt, honey, and optional vanilla.
  3. Add fruit and nuts, and mix together well.
  4. If not eating right away, this cereal will keep in a covered container in the refrigerator for three to four days.  You may prefer to add the fruit and nuts just before serving.
  5. This traditional Swiss recipe is a nice change from instant oatmeal or cold cereal.  Feel free to adapt it to suit your child’s taste by substituting different fruits or omitting the nuts.
