Honey Bran Muffins

½ cup buttermilk or plain yogurt (or 1.2 cup milk mixed with 1 tsp. Vinegar and set aside for 5 –10 minutes.

1-1/2 cups All-Bran

1cup Hot water

1/3 cup honey

¼ cup canola oil

½ teaspoon salt

1/egg or 2 egg whites beaten

1 teaspoon baking soda

1-1/2 cups flour, preferably half whole wheat and half white.

Optional: ½ cups raisins, ½ cup chopped nuts, 2 tbs. poppy seeds or sunflower seeds.

 

  1. Preheat the oven to 400 degrees. Line muffin tin with paper baking cups or use a nonstick muffin pan.
  2. Combine the bran cereal, hot water, honey, oil, salt, and egg. Let stand for 1-2 minutes.
  3. Add buttermilk or yogurt, then the flour with the baking soda stirred into it. Mix gently until just blended. Do not over beat!
  4. Fill the muffin cups 2/3 full.
  5. Bake for 20 to 25 minutes, or until a toothpick inserted near center comes out clean.
