Spicy Chinese Noodles (Peanuts in recipe)

8 ounces dry pasta

1/3 cup peanut butter, preferably chunky

3 tbs. soy sauce

3 tbs. vinegar

1 tbs. sugar as desired

1 or 2 dashes of cayenne pepper, as desired

Optional: Lightly steamed green pepper strips, snow peas, chopped scallions, and garlic powder.

  1. Cook the pasta according to the directions on the package. Drain.
  2. While the pasta is cooking, combine in a small saucepan the peanut butter, soy sauce, vinegar, sugar, and cayenne.
  3. Mix together the pasta and the peanut butter sauce. Add vegetables, as desired. If the pasta is dry, add a little water to thin the sauce.
